Fairmont To Raise Money For Sustainable Seafood

Fairmont Hotels & Resorts across the globe will raise awareness and funds to protect the world's waters throughout the month of April. Chefs in Fairmont dining rooms will serve up their favorite sustainable seafood entrees, while dining room guests will be invited to donate $1 (or local equivalent) to the National Geographic Society in support of ocean conservation and the restoration of living marine resources.

"While Fairmont kitchens are already actively involved in choosing seafood wisely and taking a leadership role in their communities, participating in this program will give us the opportunity to cultivate our global positioning and substantially contribute to the protection of marine life," said Mariano Stellner, Corporate Director of Food & Beverage at Fairmont Hotels & Resorts.

Following on the heels of WWF - Earth Hour 2010 on March 27 and to complement Earth Day on April 22, Fairmont will use the month of April to focus on water sustainability and the world's oceans, covering more than 70% of the Earth's surface.

With a long commitment to environmental stewardship and responsible tourism, Fairmont is a sponsor of the National Geographic Mission Programs as well a member of the WWF global Climate Savers program. For the past two decades, Fairmont has upheld its pledge to preserve the places in which we live, work and play. The Green Partnership program was launched in 1990 - an industry-leading initiative to reduce its impact on the environment through energy efficiency, water conservation and waste management.

In 2008, Fairmont's hotels and resorts worldwide removed threatened fish species such as Chilean Sea Bass and Bluefin Tuna from their restaurant menus and aligned themselves locally with reputable seafood watch organizations, ensuring guests continue to be provided with a comprehensive selection of sustainable seafood choices.

Put into practice, Fairmont's commitment to ocean sustainability means working with reputable suppliers who purchase fish that are resilient to fishing pressure and harvested in ways that limit damage to marine or aquatic habitats. The end result: healthier practices flowing down to suppliers, who then offer better choices to restaurants. In addition, by promoting awareness and sustainable alternatives among its guests, Fairmont hopes to play a role in influencing and shaping the tastes and preferences of guests who care about the future of the planet.

Fairmont Hotels & Resorts' dedication to the protection of the environment goes well beyond helping conserve species that reside in the sea. On a wide-ranging basis, the luxury hotel brand maintains a comprehensive commitment to purchasing local, organic and sustainable food items whenever possible. But it's important to note that good environmental practices do not mean guests at Fairmont restaurants miss out on world-class cuisine. Rather, they feast on various fish caught or sourced in ways that ensure their continued survival.
